Case Study - Labatt House
The Draft Room at Labatt House opened on November 16th, 2018 under the direction of Pegula Sports and Entertainment's Hospitality Division, with BHS providing 114000 foodservice equipment, project management, design services and many custom built pieces. The Draft Room boasts seasonably available craft and specialty beers brewed on site and seasonal fare to the Western New York community.
The restaurant holds two bar areas, seating for 200, and a 4,000 square foot beer garden along Illinois Street that opens up to Alumni Plaza and KeyBank Center. The Draft Room serves as a communal establishment where beer and food are paired and shared among friends and family, creating a unique and personalized guest-centered experience that links the Labatt brand with the city of Buffalo.
Project Management / Design Services / Equipment
BHS provided project management, design services and equipment to help Labatt House achieve their vision for the Draft Room, working to develop and equip a brand new commercial kitchen, beer garden, two full service bars, one of which is close to 150’ long, and “Bakery 55” which is a full production bakery that serves walk-in trade from an entrance that is separate than that of the restaurant.
BHS carefully evaluated existing site conditions of this 110 year old building in order to repurpose the area that would become a modern commercial kitchen and social epicenter in the heart of Buffalo. Challenges abounded in adapting this century old structure for use with state of the art foodservice equipment. BHS built out a complete draft beer system to help the Draft Room promote its extensive menu of craft beers and Labatt products, utilizing 100’ of underground beer lines for 48 different beer taps. The BHS project manager was on site every day during the installation, working with the mechanical trades to solve problems and overcome challenges, ensuring a quality result that met the vision of the Pegula team. The front quarter of the ground floor features the Tasting Bar, which is run separately by Labatt of North American. BHS provided a custom designed, never before utilized system allowing the taps to draw directly from the brine tanks, using a chilling system to bring the beer down to optimal temperature for customers’ enjoyment as it comes out of the tap. In addition to these services, BHS provided Labatt House with six walk-in coolers/freezers, 4 separate exhaust hoods as well as the expertise to pull it all together.
